Our Story

We started with a simple conviction: the best bread can't be rushed, and the best coffee deserves the same respect.

Amazonia Cafe began as a neighborhood dream in Burien — a place where the smell of baking bread feels like coming home, where your barista knows your order, and where the grocery shelf carries the same care you'd give your own kitchen.

Every loaf we bake follows traditional methods: long cold fermentation, hand-shaped, and baked in small batches. Our coffee is sourced from roasters who treat sustainability as non-negotiable. Our market features local producers whose products we'd proudly serve our own families.

Behind every loaf at Amazonia is a process that can't be sped up without sacrificing everything that makes it worth eating. Our sourdough ferments for a full 48 hours — that's not a marketing choice, it's biology. Longer fermentation develops complex flavor, improves digestibility, and creates the open crumb structure our customers expect.

Our pastry team arrives before sunrise to laminate butter into dough by hand — layer by layer — because machine-made shortcuts simply can't replicate the lift and flake that comes from patient, skilled work.
